Ingredients

  • 180 g water
  • 50 g UrDinkel whole wheat flour
  • 450 g UrDinkel whole wheat flour
  • 220 g water
  • 10 g salt
  • 7 g fresh yeast

Instructions

  1. Cooked Dough: In a saucepan, bring the flour and water to a boil on the stove, stirring constantly. Once the starch has gelatinized, transfer the cooked dough to a bowl, cover it with plastic wrap directly on the surface, and let it cool well in the refrigerator for 1-2 hours.
  2. Main Dough: Knead all ingredients in a kitchen machine for 7-10 minutes on low speed. Then place the dough in a greased bowl, cover, and let it ferment at room temperature for 60 minutes. Now stretch and fold the dough. Do not knead. Cover the dough again and let it rest in the refrigerator overnight (12-24 hours).
  3. Shaping: Stretch and fold the dough. Let it rise at room temperature for 1 hour. Shape the dough into a ball, lightly flour it, and place it in a high (steep) bowl with the bottom side up. Let it rise for 30 minutes and preheat the oven to 230 degrees. Place the bread on a baking stone and reduce the oven temperature to 190 degrees. Bake for 40-55 minutes.
